Organic Cookery Classes (Portugal)
Located in the valley of Quinta do Rio Touro which is engulfed in the protected land of the Sintra-Cascais Nature Park lies an amazing organic farm. Our good friend Sofia, the owner has always had an interest in food and wellness. She is certified in plant based nutrition through Cornell University and T. Colin Campbell Centre for Nutrition Studies as well as a health coach certification through Institute of Integrative Nutrition. She also holds a professional plant-based cooking certification.

Yes, we have found the perfect place for your organic cookery workshops and can also include dinners and retreats. You are using the produce from the organic market garden or food forest using the principles of permaculture, or creating a retreat in a nature and organic setting.

Join our organic cookery classes with plant based foods either as a workshop or a family based cooking holiday. You can be involved in the daily farm activities, go horseback riding through the hills of Sintra, walks, hikes, surfing the choice is yours.

By following with interest her father’s pastry shop, she discovered a passion for cooked desserts and is now pastry chef at Alain Ducasse au Plaza Athenee, giving her the chance to develop her ideas.

Jessica has spent the last three years redeveloping a new kind of pastry-making rooted in the ‘natural’ approach. This is inextricably linked with the seasons and producers, and is respectful of both taste and the environment. It’s important to bring out the natural sugar in fruit and add a touch of originality to enhance the taste.

Her culinary concept, known asDesseralité’, is a mix between naturalness and dessert; it’s also the name of her book. When Jessica creates a dessert there’s always a story behind it, and at the heart of the creation process is respect for the produce. She works to surprise and delight with each bite. Her desserts are not very sweet and this works well with a growing wellness trend to not eat desserts with too much sugar in them.

Stylish Cocktail Tips

A Classic Gin Martini
This is the most quintessential cocktail and one of the most iconic drinks in the world. For this classic we pre-mix gin and vermouth in a 4:1 ratio for the ultimate depth of flavour. “For best results, set aside in the freezer to allow the vibrant aromatic and citrus notes to come to life,”

Ingredients
60ml Bogart’s gin
15ml dry vermouth
Ice

Method
1. First, chill your cocktail mixer with ice
2. Drain the excess water from the mixer
3. Pour 15ml of dry vermouth into the mixer
4. Add 60ml of Bogart’s gin and stir well
5. Strain the mixture into a chilled martini or coupe glass

The Ultimate G&T
Want to know the secret to a great G&T? It’s of course great gin – but lots of ice, too. “For the most palatable taste, incorporate a citrus element and a botanical essence such as basil leaves for the best balance of flavours.”
Ingredients
50ml Bogart’s gin
200ml Double Dutch cucumber and watermelon tonic water
1 orange
Basil leaves
Ice

Method
1. Add plenty of ice to a balloon-style glass and allow to chill
2. Pour 50ml of Bogart’s gin into prepared glass
3. Slowly pour over 200ml of the cucumber and watermelon tonic water
4. Peel an orange and squeeze over the glass so that small drops of the fruit’s essential oils add an extra tangy flavour
5. Finally, add more ice and garnish with a basil leaf to enhance the aroma

A Sophisticated Manhattan

This bitter-sweet concoction enjoys the same celebrity status in any cocktail bar today.: “The secret to the perfect tang of our classic Manhattan cocktail lies in our Bogart’s Irish whiskey – and don’t forget to top yours off with a Luxardo maraschino cherry.”
Ingredients
50ml Bogart’s Irish whiskey
2ml sweet red vermouth
Dash of Angostura bitters
Luxardo maraschino cherry
Ice

Method
1. Add all the ingredients into a mixing glass with ice, stir until well chilled
2. Strain into a chilled coupe
3. Garnish with a maraschino cherry
